Celebrating National Soup Month - Bucyrus, OH | Haring Realty

On a chilly winter evening, few things are more comforting than a hot bowl of hearty soup. January is National Soup Month, making it an excellent time to try a new recipe or reinvent your favorite soup flavor. Our REALTORS® suggest trying some of these recipes to celebrate.

  • Cheesy Potato Soup with Bacon
    This full-flavored potato soup is a delicious option on a chilly winter evening and can be made in less than an hour. Start by cooking bacon in a Dutch oven until crispy, leaving a couple of tablespoons of the drippings.

    Then, add a few pounds of potatoes, scallions, onion, garlic, and butter to the dutch oven. Cook until the onions are soft. Add flour, salt, and pepper, stirring the ingredients to ensure that everything is coated. 

    Stir in chicken broth and bring the mixture to a boil. Reduce the heat and allow the soup to simmer until the potatoes are soft. Use a potato masher to mash the potatoes, and add your cheese.

    Serve and top with bacon, cheese, and green onions. 

  • Slow Cooker French Onion Soup
    French onion soup
    makes for a decadent meal, but it's earned an unfair reputation for being a cumbersome, time-consuming dish to prepare and cook. Fortunately, using your slow cooker for this recipe eliminates much of the hassle associated with preparing this classic soup. 

    You'll stir onions, pepper, salt, sugar, and melted butter together in your slow cooker before adding thyme and basil. Cook these ingredients on high for six to seven hours, stirring at the halfway point. This caramelizes the onions so they take on a sweet, savory flavor.     Next, add beef broth and sherry vinegar after removing the basil and thyme. Allow the soup to cook on high for 30 minutes.

    Transfer the soup to oven-safe dishes, top with your favorite gruyere or Swiss cheese, and broil until the cheese is golden brown.

  • Roasted Tomato Soup with Cheddar Cheese
    A bowl of tomato soup pairs wonderfully with a tasty grilled cheese sandwich, or serve it as an appetizer before enjoying your main course. 

    You'll toss a few pounds of halved tomatoes with olive oil, salt, pepper, garlic, and herbs. Bake until the tomatoes start to split, usually about 30 minutes.

    Peel the skins from the tomatoes and transfer them to your dutch oven. After you add broth, vinegar, and salt, use an immersion blender until your soup is smooth. Bring to a simmer and let the mixture cook for 10 minutes. 

    If necessary, blend again to ensure your soup is smooth before adding the cheese. Remove the soup from the heat, ladle into a bowl, and add your favorite toppings.

  • Slow Cooker Vegetable Soup
    This convenient vegetable soup recipe is ideal for enjoying a healthy meal after a long day. Place potatoes, onions, garlic, celery, carrots, beans, and parsnips in your slow cooker. Also, you can add a few strips of cooked bacon for a more meaty flavor.

    Add salt, pepper, and chicken broth before cooking on low for six hours. Make sure the potatoes and beans are tender. Then, add spinach or kale and the juice from one fresh lemon. Cook for a few minutes until the spinach or kale is tender, and serve.
